What on? adding-subtracting-dividing-multipling-?????????????????. Are the lesson you want, to teach youself fractions, or to give to the students? What state are you teaching in?

If the only time you call for help is when the principal is observing...............

You seem to have quite a bit of nerve....
So they need some help and decided to go outside their school. Perhaps all of their daily questions go to their mentor. What if they need anxiety relief and turn to an outside source. It takes a big person to NOT be judgemental, maybe you should consider a diffierent profession.

Sounds to me like you are just having a panic attack. If this is an introductory lesson, let your principal know ahead of time or state it to the students while telling them the purpose of the lesson. Be positive. Remember your principal is there to help you. If this is an introductory lesson, try starting with a kwl activity and find out how much your students know about fractions. I know that you have already been observed by now, but this might help someone else. I applaud you for asking.
