I will give you what I like to do for a private, 6/7/8 school.
6: Keyboarding (technique), Microsoft Word, Microsoft Powerpoint
7: Keyboarding (accuracy), Microsoft Excel, Computer Hardware
8: Keyboarding (speed), Internet, Computer Hardware

I think it is so important for students to learn keyboarding, and it needs to be taught consitantly for any progress to be made. That is why I like to do it every year in middle school, stressing a new objective each year.

I like two programs: Paws in Typing Town (for younger kids, and an old program, but works well), and Mavis Beacon Teaches Typing.

I usually make a flash-based tutorial, then show them in class. the flash-based tutorial is intuitive. My students could understand it easily. besides they also can copy all the tutorials to their storage devices and take them to home for self-study.

here is an easy way to create flash-bade tutorial for teaching

You might want to check in the Middle School forum. I wrote some long messages about computer skills and how to teach them to a question there.
